There are lots of detailed Shopify reviews out there and we won't try to reproduce them there but as you asked for things that people dislike most, here's a short list. But before I do so, I should say Shopify is a solid platform that meets most of the needs of small to medium ecommerce merchants.
1. Lack of flexibility. Because it is designed as a 'one size fits all' solution if you have unique needs it will be hard to work around the platform, even with the plugins available on the secondary marketplace. I advise you to figure out what your specific needs are and then determine if it will meet them. Plugins can also get quite expensive really quickly so factor that in, in your monthly budget for an ecommerce solution in addition to Shopify's base price.
2. Customer support has been really bad recently. Maybe it is a result of the hyper growth occasioned by the pandemic, but they have really neglected customers.
3. Shopify Capital: There his Shopify Capital Phobia and Shopify Capital mania in equal measure! Some people really like it because of the speed and ease of accessing credit, while others claim it is pure usury, worse than payday lenders. Fortunately there other options like Payability and Stripe Capital (effective interest rate is 20% per annum with no penalty for early payment, so in practice it will usually be much less).
4. Inability to use mutliple discounts. If you want to offer a christmas deal and a senior citizen discount, it is currently impossible to do, even with plugins. Not sure how common this scenario is but seems to be a common complain.
